For the mind.
There are many merits to a slow and steady weight-loss, what are the biggest ones for you?

IMO, learning how to make it a true lifestyle change is the best reason for a slow & steady loss. With a slow loss (like I have had), it gives me time to truly make it a lifestyle change. I don't think I'd truly "get" the change as well with a rapid loss.




For the body.
Chicken Chimi in the Oven

4 tablespoons olive oil, divided
1/2 cup chopped onion
2 cloves garlic, minced
2 cups salsa
3 tablespoons water
1/8 cup chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 pound cooked chicken breast halves, shredded
8 tortilla, 10-inch size

Preheat oven to 425 degrees F (220 degrees C). Lightly grease a medium baking dish. Heat 2 tablespoons oil in a large saucepan over medium heat. Saute onion and garlic in oil until tender. Stir in salsa and water. Season with chili powder, cumin, and cinnamon. Transfer the mixture to a blender or food processor, and blend until smooth. Return mixture to the saucepan, stir in the chicken, and cook until heated through. If desired, spoon refried beans and/or cheese down center of each tortilla and top with equal amounts of the chicken mixture. Fold tortillas over the filling, and secure with toothpicks. Arrange seam-side down in the prepared baking dish, and brush with the remaining olive oil. Bake 15 minutes in the preheated oven, turning every 5 minutes, until golden brown and crisp.

Notes: I usually use a whole-wheat tortilla and/or a low-carb version but the nutritional information is based on a plain white flour tortilla. You can cut back on the oil, if desired. I usually "Misto" my chimis as they are cooking to give them a little extra crunch.

Yield: 8 chimichangas
Nutritional Information: 225 calories, 12g fat (2g saturated fat, 6g monounsaturated), 39mg cholesterol, 623mg sodium, 19g carbohydrates (3g fiber), 17g protein
